Badusha is an easy Indian sweet recipe prepared using maida, ghee and sugar. It is mainly prepared for special occasions like Diwali. In south India, It is called badusha and in north India, it is known as balushahi. It is an instantΒ sweet recipe prepared in few minutes. Balushahi is prepared using maida, ghee, curd and baking soda. First mix the dough and the dough is soft and thick.Β Once the dough is prepared make it into small balls and press the center of the ball with a thumb to form a dent. Then deep fry it in oil or ghee. Take it out and soaked the badusha in sugar syrup. The outer side of balushahi is crispy and the inner side is soft juicy and flaky. Cookery ParkIngredients
For making dough
- 1Β½ cup Maida
- Β½ tsp Baking soda
- 2 tbsp Curd
- ΒΌ cup Ghee
- Water (as needed)
- Salt (a pinch)
For sugar syrup
- 1 cup Sugar
- Β½ cup Water
- a pinch Yellow color (optional)
- ΒΌ tsp Cardamom
Instructions
- In a mixing bowl, add 1 Β½ cup maida, Β½ tsp baking soda, a pinch of salt, 2 tbsp curd and ΒΌ cup ghee mix well.
- Add water little by little and make a soft and thick dough. Donβt knead the dough too much.
- Take a small amount of dough and make a small ball.
- Press in the center using your thumb to form a dent at the center of the ball.
- Heat oil in a pan and add badusha to it.
- Fry both sides on low flame until it turns golden brown color.
- Take it out from oil and keep it aside.
- In another pan, add 1 cup sugar and Β½ cup water mix well.
- Add yellow food color ( optional) and cardamom powder mix well.
- Boil the sugar syrup until it comes to one string consistency.
- Add fried badusha in sugar syrup and coat the sugar syrup on both sides.
- Soak badusha in sugar syrup for 5 minutes.
- Delicious badusha or balushahi sweet is ready to serve.

Note
1.Fry badusha in low flame.
2.Donβt knead the dough too much. We want a soft, rough dough. If knead too much, donβt get the flakiness texture of badusha.
3.You can skip the color powder and add saffron for nice golden color.
