Jackfruit Kesari is prepared using ripenedΒ jackfruit, Rava, sugar, ghee and cardamom. Jackfruit gives a nice flavor to this Kesari. First roast Rava using ghee which gives a nice flavor to Kesari. Then saute jackfruit pieces using ghee and add water. When water boils add roasted Rava and cook till soft and add food color or saffron which gives a nice color toΒ Kesari. Then add sugar to it and sugar melts because of heat and later the Jackfruit Kesari starts to thicken. at last, add fried cashews and raisins which give a nice crunchy texture while eating every bite. Don’t reduce the ghee. If you reduce the amount of ghee, Kesari gives the sticky texture. So don’t reduce the ghee and you can add more ghee and sugar as per your taste. Add cardamom in it gives a nice flavor. I used chopped jackfruit pieces. It gives a nice taste while eating every bite. Not only jackfruit but jackfruit seeds are also used to prepare many recipes. - 1 cup Jackfruit (chopped)
- 1 cup Rava
- 1Β½ cup Sugar
- 3 cup Water
- ΒΌ cup Ghee
- 3 Cardamom
- 10 Cashewnut
- 10 Raisins
- Yellow color (a pinch)
Instructions
- In a pan, heat 1 tbsp ghee and roast the cashew nuts well.
- Then add raisins roast until it bubbles and keep aside.
- In the same pan, add Rava and roast until a nice aroma comes and keep aside.
- Heat 2 tbsp ghee in the same pan and add 1 cup chopped jackfruit pieces.
- Saute jackfruit for few minutes.
- Add 3 cups water, yellow food color, cardamom and 1 tbsp ghee.
- Once the water boiled well, add roasted rava little by little and stir well without lumps.
- Once Rava is cooked and thickened, add sugar and mix well.
- All sugar crystals melt and the Rava mixture turns watery.
- Stir continuously until it thickens well.
- Add roasted cashew nut and raisins mix well.
- Once Kesari leaves the pan, switch off the flame.
- Tasty Jackfruit Kesari is ready to melts in the mouth.

Note
1.Donβt want to change the color while roasting rava. Otherwise, it gives a burnt taste. Roast Rava in low flame.
2.Add Rava only after water boiled well.
3.If you want add more ghee and sugar according to your taste.
4.I add chopped jackfruit pieces. You can also add grinded jackfruit paste. But chopped jackfruit pieces give a nice taste while eating every bite.
