Avial / Aviyal is a South Indian recipe that is served with rice. It is a famous recipe in Kanyakumari. In Kerala, the Avial recipe is slightly different. They use curd in this recipe. Vegetables for avial
- 2 big size Brinjal
- 1 Drumstick
- 1 small piece Cucumber
- 1 Carrot
- 1 Raw banana
- 1 Potato
- 1 small piece Elephant yam
- 1 small piece Snake gourd
- 5 Cluster beans
- 3 Green chilly
For coconut paste
- 1 cup Coconut
- Gooseberry size Tamarind
- 5 pods garlic
- Β½ tsp Chilly powder
- 1 tsp Turmeric powder
- 1 tsp Jeera powder
Other Ingredients
- 2 tsp Oil
- ΒΌ tsp Mustard seeds
- few Curry leaves
- 1 cup Water
- Salt (As needed)
Instructions
- Take water in a bowl, chop all the vegetables lengthwise and kept it in water for few minutes.
- Wash and drain out all water from vegetables.
- In a blender, add coconut, garlic, chilly powder, turmeric powder, jeera powder and tamarind grind it coarsely.
- Add grinded coconut into the vegetables and mix well.
- Heat oil in a pan, add mustard seeds and curry leaves. Then add all vegetables, water and salt.
- Cover this and cook for 5 minutes in high flame.
- After 5 minutes stir well, cover and cook for few minutes in low flame until no water in it.
- Tasty Avial is ready to serve with rice.

2.Add water depending on the quantity of the vegetables you use.
