Kothavarangai poriyal is a south IndianΒ stir fryΒ recipe using Kothavarangai / Cluster beans. - 2 cup Kothavarangai/ Cluster beans
- Salt (As needed)
- Water (As needed)
- Β½ cup Coconut
- Β½ tsp Jeera
- 2 Green chilly
- Β½ tsp Turmeric powder
- ΒΌ tsp Asafoetida
- 1 tsp Oil
- ΒΌ tsp Mustard seeds
- ΒΌ tsp Urad dhal
- 1 Red chilly
- Curry leaves (few)
Instructions
- In a pan, add chopped cluster beans, salt and water and mix well.
- Cover and cook until cluster beans are cooked well.
- Drain the water from cluster beans and keep aside.
- Heat 1 tsp oil in a pan.
- Add mustard seeds, urad dhal, red chilly and curry leaves and saute well.
- Add cooked cluster beans and stir well.
- Add turmeric powder, asafoetida and salt mix well and saute for a few minutes.
- In a mixer, add coconut, green chilly and jeera grind coarsely.
- Add this coarsely grinded coconut into cooked cluster beans and stir well.
- Cluster beans stir fry/ kothavarangai poriyal is ready to serve.

Note
1.Drain all water from cluster beans before adding it to the tempering.
