For thisΒ KumbalangaΒ curry, first, peel off the skin and cut kumbalanga into small pieces. Cook pumpkin, small onion and green chilly well. Add grinded coconut paste and slightly heat it. - 2 cup White Pumpkin (chopped)
- 10 Small onion (chopped)
- 3 Green chilly (chopped)
- Salt (as needed)
- Β½ tsp Turmeric powder
- Water (as needed)
For grind
- 1 cup Coconut
- Water (as needed)
For tempering
- 1 tsp Oil
- ΒΌ tsp Mustard seeds
- Curry leaves (few)
- 1 Red chilly
- 1 Small onion (chopped)
Instructions
- In a pan, add chopped white Pumpkin, small onion, green chilly, turmeric powder, salt and water mix well.
- Cover and cook this for a few minutes or until the white pumpkin is cooked well.
- In a mixer, add 1 cup of coconut and grind it into a smooth paste by adding enough water.
- Add grinded paste to cooked pumpkin and mix well.
- Add required water and salt and mix well.
- Slightly heat the curry and switch off the flame. Don't allow it to boil well.
- Heat oil in a pan.
- Add mustard seeds, red chilly and small onion saute until small onion turns golden brown.
- Add curry leaves and saute well.
- Add this tempering to the White Pumpkin curry.
- White Pumpkin curry or Kumbalanga curry is ready to serve with rice.

Note
