Yellow Pumpkin Raita / poosanikai pachadi recipe is an easy vegetable raita recipe prepared using Yellow Pumpkin. - 1 cup Yellow Pumpkin (chopped)
- 1 Green chilly
- ΒΌ tsp Jeera
- ΒΌ cup Coconut
- ΒΌ cup Curd
- 1 tsp Oil
- ΒΌ tsp Mustard seeds
- Curry leaves (few)
- 1 Red chilly
- ΒΌ tsp Turmeric powder
- Salt (as needed)
Instructions
- Take a pan, add chopped pumpkin and water cook well.
- Once the pumpkin is cooked well, smash it with a spoon.
- In a mixer, add coconut, green chilly, jeera and turmeric powder grind it smoothly.
- Add grinded paste and salt into the cooked pumpkin mix well and cook for a few minutes.
- Once the raw smell of coconut paste goes, add curd and mix well.
- Donβt allow it to boil. Just heat it after adding curd and keep it aside.
- In another pan, add oil, mustard seeds, curry leaves and red chilly saute well.
- Add this tempering into the pumpkin pachadi and mix well.
- Yellow pumpkin pachadi / Yellow pumpkin raita is ready to serve with rice.
