For cooking soya
- 1 cup Soya / Meal maker
- Salt (as needed)
- Water (as needed)
For frying soya
- 2 Egg
- 2 tsp Chilly powder
- Β½ tsp Pepper powder
- ΒΌ tsp Turmeric powder
- 3 tbsp Corn flour
- Salt (as needed)
- Oil (as needed)
For masala
- ΒΌ tsp Mustard seeds
- Curry leaves (few)
- 1 tsp Jeera
- 2 Onion (chopped)
- 2 Tomato (chopped)
- 1 tsp Ginger garlic paste
- 2 tsp Chilly powder
- 3 tsp Coriander powder
- Salt (as needed)
Instructions
- In a pan, add water, salt and soya chunks and cook for a few minutes.
- Once cooked well, take it out without water and keep it aside. Press and Squeeze all water in it.
- In a mixing bowl, add cooked soya, eggs, salt, chilly powder, pepper powder, turmeric powder and corn flour mix well.
- Heat oil in a pan.
- Add soya chunks and fry well on high flame.
- Once fried well, take it out from the oil and keep it aside.
- In the same pan, add mustard seeds, curry leaves and jeera saute well. Add chopped onion and saute well until it turns golden brown.
- Add ginger garlic paste and saute well.
- Add tomato and saute for a few minutes.
- Once sauteed well, add chilly powder, coriander powder and salt mix well.
- Add fried soya and mix well.
- Cover and cook for a few minutes.
- Add chopped coriander leaves and stir well.
- Soya Egg fry is ready to serve.

Note
1.Don’t want to add water while making masala.
2.Don’t want to add too much oil for frying soya chunks.
3.Adjust the chilly powder according to your taste. If you want spicy curry you can increase the chilly powder.
4.Fry soya in a high flame.
5.Once cooked well, squeeze out all water in the soya.
