Beans poriyal is a south Indian stir fry recipe using French beans / green beans. Beans poriyal is also known as beans Thoran or beans stir fry. Every south Indian lunch recipe especially Tamilnadu contains a poriyal as a side dish for rice. Poriyal means vegetable stir fry which can be prepared with any one vegetable like cabbage, carrot, beetroot, beans, etc. you can try these vegetable poriyal / stir fry recipes like

Beans poriyal is healthy as well as a tasty side dish for rice. It is very easy and makes it in a few minutes. It is the best side dish for rice with sambar and rasam. Beans poriyal can be prepared with green beans, onion and coconut with a simple seasoning with mustard seeds, curry leaves, urad dhal and chana dal. Instead of big onion, you can use small onion also. If you don’t have onion you simply skip it. Without onion also, this poriyal tastes good. Ingredients
  

  • 2 cup Beans (chopped)
  • 1 medium size Onion
  • 2 Green chilly (chopped)
  • Β½ tsp Turmeric powder
  • Β½ cup Water
  • Salt (as needed)
  • 2 tsp Oil
  • ΒΌ tsp Mustard seed
  • few Curry leaves
  • 1 tsp Chana dal
  • 1 tsp Urad dhal
  • 1 Red chilly
  • ΒΌ tsp Asafoetida

For grind

  • Β½ cup Coconut
  • ΒΌ tsp Jeera

Instructions

  • In a blender, add coconut and jeera grind it coarsely
  • Heat oil in a pan
  • Add mustard seeds when it splutters, add urad dhal, chana dhal, redchilly and curry leaves
  • Add chopped onion and saute until it turns golden brown
  • Add green chilly saute well
  • Add chopped beans saute for few minutes
  • Add water and salt into it and stir well
  • Cover and cook for a few minutes on a low flame
  • Dry well without water
  • Add turmeric powder and asafoetida stir well
  • Add grinded coconut and stir well
  • Beans poriyal is ready to serve with rice
