Ingredients
  

  • 2 cup Carrot (chopped)
  • Asafoetida (a pinch)
  • 2 tsp Oil
  • ΒΌ tsp Mustard seeds
  • Curry leaves (few)
  • 1 tsp Urad dhal
  • ΒΌ cup Water
  • salt (as needed)

To grind

  • Β½ cup Coconut
  • Β½ tsp Jeera
  • Β½ tsp Chilly powder
  • ΒΌ tsp Turmeric powder

Instructions

  • In a blender, add coconut, jeera, chilly powder and turmeric powder grind it coarsely.
  • Heat oil in a pan.
  • Add mustard seeds when it splutters, add urad dhal and curry leaves stir well.
  • Add chopped carrot stir well and saute for few minutes.
  • Add salt and Asafoetida stir well.
  • Add ΒΌ cup of water to it. Cover and cook for few minutes on a low flame.
  • Dry well without water.
  • Add grinded coconut stir well.
  • Carrot poriyal is ready to serve with rice.

Note

1.Grind coconut coarsely. It gives a good taste to this stir fry.
2.Do add too much water. If adding too much water carrot will overcook. The crunchy texture of carrot is good to eat.
3.After all water evaporates, then add coconut mixture.
4.You can chop carrot small cubes or in big pieces as you like. But cut it into small cubes gives a nice taste.
