- 2 cup White pumpkin (chopped)
- 1 tsp Oil
- ΒΌ tsp Mustard seeds
- ΒΌ tsp Jeera
- ΒΌ tsp Urad dhal
- Curry leaves (few)
- 1 Onion (chopped)
- 1 Tomato (small chopped)
- ΒΌ tsp Turmeric powder
- Salt (as needed)
To grind
- Β½ cup Coconut
- Β½ tsp Jeera
- 2 Red chilly
Instructions
- Heat oil in a pan.
- Add mustard seeds, urad dhal, jeera and curry leaves and saute well.
- Add chopped onion and saute well until it turns golden brown.
- Add tomato and saute well until it cooks well.
- Add turmeric powder and salt and saute for a few minutes.
- Add chopped white pumpkin or ash gourd and saute for a few minutes.
- Add required water and cover and cook for a few minutes. Once the ash gourd is cooked well, dry well without water.
- In a mixer, add coconut, jeera and red chilly grind it coarsely.
- Add grinded paste and salt into cooked ash gourd and stir well.
- White pumpkin/ash gourd stir fry is ready to serve.
