What is Rava Kesari / Kesari Bath
Rava Kesari is a famous sweet in south India. It is also known as the Kesari bath. It is prepared by using Rava / sooji / semolina, sugar, ghee, cardamom and food color. Mainly It is prepared for special occasions. It is a very easyΒ sweet recipe which can be prepared in less time and also it can be done by everyone who doesn’t know to cook. Rava kesari is very tasty and it melts in the mouth. First roastΒ rava using ghee which gives a nice flavor to Rava Kesari. Then add water and cook till soft and add food color or saffron which gives a nice color to Kesari. Then add sugar to it and sugar melts because of heat and later the Kesari starts to thicken. At last, add fried cashews and raisins which give a nice crunchy texture while eating every bite. Don’t reduce the ghee. If you reduce the amount of ghee, Kesari gives the sticky texture. So don’t reduce the ghee and you can add more ghee and sugar as per your taste. Add cardamom in it gives a nice flavour. - 1 cup Rava
- 1Β½ cup Sugar
- 3 cup Water
- ΒΌ cup Ghee
- 3 Cardamom
- 10 Cashewnut
- 10 Raisins
- A pinch Yellow food color
Instructions
- In a pan, heat ghee and roast the cashewnuts well.
- Then add raisins roast until it bubbles and keep aside.
- In the same pan, add rava and roast untilnice aroma comes and keep aside.
- In the same pan, add water, yellow food colour, cardamom and ghee.
- Once water boiled well, add roasted rava little by little and stir well without lumps.
- Once rava cooked and thickened, add sugar and mix well.
- All sugar crystals melts and the rava mixture turns watery.
- Stir continuously until it thicken well.
- Add roasted cashew nut and raisins mix well.
- Tasty rava kesari is ready to melts in mouth.

Note
1.Donβt want to change the color while roasting rava. Otherwise it gives burn taste. Roast rava in low flame.
