Take water in a bowl, chop all the vegetables lengthwise and kept it in water for few minutes.
Wash and drain out all water from vegetables.
In a blender, add coconut, garlic, chilly powder, turmeric powder, jeera powder and tamarind grind it coarsely.
Add grinded coconut into the vegetables and mix well.
Heat oil in a pan, add mustard seeds and curry leaves. Then add all vegetables, water and salt.
Cover this and cook for 5 minutes in high flame.
After 5 minutes stir well, cover and cook for few minutes in low flame until no water in it.
Tasty Avial is ready to serve with rice.
