Ingredients
  

  • 2 Ripe avocados
  • 1 Cucumber
  • 1 Red onion (small )
  • ΒΌ cup Fresh coriander leaves
  • tbsp Lemon (Juice of 2)
  • 2 tsp Olive oil (optional)
  • 1 Honey (as needed)
  • Salt (as needed)
  • Pepper (as needed)

Instructions

  • Peel off the skin, remove the pits and cut the avocado into small pieces.
  • Wash the cucumber and slice it into thin rounds.
  • Cut the red onion into small pieces.
  • Also, roughly chop the coriander leaves and keep them aside.
  • In a small bowl, add lemon juice, olive oil, honey, salt and pepper and mix well. Adjust the seasoning as per your taste.
  • In a large bowl, add chopped avocados, cucumber, red onion and coriander leaves. Stir well until combined.
  • Add dressing to the avocado mixture and stir well until the dressing is coated with all the ingredients evenly.
  • Rest the salad for 10 minutes.
  • Again mix the salad before serving.
  • Finally, garnish the avocado cucumber salad with fresh coriander leaves.
  • Avocado cucumber salad is ready to serve.
