Ingredients
  

  • 2 Ripe avocados (chopped)
  • 1 cup Cherry tomatoes
  • 1 small Red onion (thinly sliced)
  • ½ cup Corn kernels
  • ½ cup Black beans
  • ¼ cup Fresh coriander leaves (chopped)
  • 1 Jalapeno pepper (optional)
  • Juice of 1 Lemon
  • 2 tbsp Olive oil
  • Salt (as needed)
  • Pepper (as needed)

Instructions

  • In a large bowl, add chopped avocados, cherry tomatoes, red onion, corn kernels, black beans, coriander leaves and jalapeno pepper. Stir well until combined.
  • In a separate small bowl, add lemon juice, olive oil, salt and pepper and mix well.
  • Add this dressing to the avocado mixture and stir well until the dressing is coated with all the ingredients evenly.
  • Rest the salad for 10 minutes.
  • Again, mix the salad before serving.
  • Finally, garnish the avocado salad with fresh coriander leaves.
  • Avocado salad is ready to serve.
