Avocado Shrimp salad is a refreshing and healthy salad recipe prepared using ripe avocados and Shrimp. It is the best nonvegetarian salad recipe and can be prepared in a few minutes.

Ingredients
  

  • 2 cup Cooked shrimp (peeled and deveined)
  • 2 Ripe avocados
  • 1 cup Cherry tomatoes
  • 1 small Red onion (thinly sliced)
  • ¼ cup Fresh coriander leaves (chopped)
  • ¼ cup Lemon juice
  • 2 tbsp Olive oil
  • 1 Garlic clove (minced)
  • 1 jalapeno pepper (seeded and minced)
  • Salt (as needed)
  • Pepper (as needed)
  • Mixed salad greens (optional)

Instructions

  • Peel off the skin, remove the pits and cut the avocado into small pieces. Cut cherry tomatoes into half.
  • In a small bowl, add lemon juice, olive oil, minced garlic, minced jalapeno, salt and pepper and mix well.
  • Adjust the seasoning as per your taste. Keep the dressing aside.
  • In a large bowl, add chopped avocados, cherry tomatoes, red onion and coriander leaves. Stir well until combined.
  • Add cooked shrimp and dressing to the avocado mixture and stir well until the dressing is coated with all the ingredients evenly.
  • If want add some mixed salad greens to it.
  • Rest the salad for 10 minutes.
  • Again mix the salad before serving.
  • Finally, garnish the Avocado Shrimp Salad with fresh coriander leaves.
  • Avocado Shrimp Salad is ready to serve.
