Peel off the skin, remove the pits and cut the avocado into small pieces. Cut cherry tomatoes into half.
In a small bowl, add lemon juice, olive oil, minced garlic, minced jalapeno, salt and pepper and mix well.
Adjust the seasoning as per your taste. Keep the dressing aside.
In a large bowl, add chopped avocados, cherry tomatoes, red onion and coriander leaves. Stir well until combined.
Add cooked shrimp and dressing to the avocado mixture and stir well until the dressing is coated with all the ingredients evenly.
If want add some mixed salad greens to it.
Rest the salad for 10 minutes.
Again mix the salad before serving.
Finally, garnish the Avocado Shrimp Salad with fresh coriander leaves.
