Ingredients
  

  • 2 cup Beetroot (chopped)
  • 1 Onion (chopped)
  • 2 Greenchilly (chopped)
  • 2 tsp Oil
  • ¼ tsp Mustard seeds
  • Curry leaves (few)
  • ½ tsp Urad dhal
  • Salt (as needed)
  • ½ cup Water (or as required)

To grind

  • ½ cup Coconut
  • ½ tsp Jeera

Instructions

  • In a blender, add coconut and jeera grind it coarsely.
  • Heat oil in a pan. Add mustard seeds, urad dhal and curry leaves saute well.
  • Add chopped onion saute well.
  • Add chopped green chilly and salt saute well.
  • Add beetroot and saute for few minutes.
  • Add ½ cup of water for cooking beetroot.
  • Cover and cook for few minutes on low flame.
  • Dry well without water.
  • Add coarsely grinded coconut and stir well.
  • Healthy Beetroot poriyal is ready to serve with rice.
