Add 1 cup of coconut to a pan and dry roast well.
Add chilly powder, coriander powder and turmeric powder and saute for a few minutes.
Add chopped ginger, garlic and small onion and saute until they cooked well.
Add a few curry leaves and asafoetida saute well.
Allow this to cool well.
After cooling well, add it into a mixer jar and grind it into a smooth paste by adding enough water.
Heat oil in a pan.
Add mustard seeds, fenugreek, ginger, onion and curry leaves and saute until onion cooked well.
Add chopped breadfruit and saute for a few minutes.
Add salt and water and mix well. Cover and cook until breadfruit is cooked well.
Once cooked well, add grinded coconut paste, salt and water mix well.
Cook this for a few minutes.
Finally, add chopped coriander leaves and mix well.
Breadfruit curry is ready to serve.
