Carrot Poriyal recipe | Carrot Stir fry recipe. Carrot Poriyal is a tasty and healthy veg stir fry recipe that is prepared using carrots and coconut. In south India especially in Tamilnadu, it is a very famous recipe.

2 cup Carrot (chopped) Asafoetida (a pinch) 2 tsp Oil ¼ tsp Mustard seeds Curry leaves (few) 1 tsp Urad dhal ¼ cup Water salt (as needed) To grind ½ cup Coconut ½ tsp Jeera ½ tsp Chilly powder ¼ tsp Turmeric powder
In a blender, add coconut, jeera, chilly powder and turmeric powder grind it coarsely.
Heat oil in a pan.
Add mustard seeds when it splutters, add urad dhal and curry leaves stir well.
Add chopped carrot stir well and saute for few minutes.
Add salt and Asafoetida stir well.
Add ¼ cup of water to it. Cover and cook for few minutes on a low flame.
Dry well without water.
Add grinded coconut stir well.
Carrot poriyal is ready to serve with rice.
