First, cut cauliflower into small pieces.
In a vessel, add hot water, salt, turmeric powder and add cauliflower pieces and kept it for a few minutes.
After a few minutes, drain the cauliflower from the water and keep it aside.
Heat 1 tsp oil in a pan.
Add mustard seeds, ½ tsp jeera and curry leaves and saute well.
Add chopped onion and saute until it turns golden brown.
Add ginger garlic paste and saute well.
In a mixie, add chopped tomato and grind it into a smooth paste.
Add this tomato paste to sauteed onion mix well and saute it for a few minutes.
Once sauteed well, add turmeric powder, chilly powder, coriander powder, and garam masala mix well and cook for a few minutes.
Add cauliflower pieces and saute for a few minutes.
Add enough water and salt and mix well.
Cover and cook for a few minutes. It should be thick gravy consistency.
Finally, add chopped coriander leaves and mix well. Simple Egg curry is ready to serve.
