Heat ghee in a pan.
Add cashew nuts and roasted it well. Take it out and keep it aside.
Add grated beetroot and desiccated coconut saute for a few minutes.
Add 1 ½ cup of milk and cook for a few minutes.
After a few minutes, milk evaporates and the beetroot mixture starts to thicken.
Add ¾ cup sugar and mix well.
After a few minutes, the sugar dissolves and it turns watery.
Stir well and cook this for a few minutes. After a few minutes, it starts to thicken.
Finally, add roasted cashew nuts and cardamom powder mix well.
Allow this mixture to cool.
Once cooled well, take a small portion out of this mixture and shape it as a laddu.
Roll the laddu into the desiccated coconut.
