Ingredients
  

  • 1 cup Soba noodles
  • 2 tbsp Sesame oil
  • 3 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Honey or maple syrup
  • 1 tbsp Peanut butter
  • 2 cloves Garlic (minced)
  • 1 tsp Fresh ginger (grated)
  • 1 small Cucumber
  • 2 carrots
  • few Fresh coriander leaves (chopped)
  • 2 Green onions (thinly sliced)
  • 1 tbsp Sesame seeds (for garnish)

Instructions

  • Cook soba noodles, drain and rinse them under cold water to cool them down. Keep the noodles aside.
  • In a mixing bowl, add sesame oil, soy sauce, rice vinegar, honey or maple syrup, peanut butter, minced garlic and grated ginger. Stir all ingredients together until mixed well.
  • Add cooked and cooled soba noodles to the bowl with the dressing. Mix well until dressing coated the noodles evenly.
  • Add chopped cucumber, carrots, coriander leaves and green onions and mix everything together to spread the vegetables equally among the noodles.
  • Cover the bowl and kept it in the refrigerator for at least 30 minutes.
  • Before serving, sprinkle some sesame seeds for garnish.
  • Chilled Cold Sesame Noodle salad is ready to serve.
