Ingredients
  

  • 3 Egg
  • ½ cup Onion (chopped)
  • ¼ cup Tomato (chopped)
  • 1 Green chilly (chopped)
  • few Curry leaves (chopped)
  • few Coriander leaves (chopped)
  • 1 tsp Oil
  • Salt (as needed)

Instructions

  • Heat 1 tsp of oil in a pan.
  • Add chopped onion and saute until it turns golden brown.
  • Add chopped green chilly and saute well.
  • Add ¼ cup chopped tomato and saute well.
  • Add finely chopped curry leaves and saute for a few minutes.
  • In a mixing bowl, add three eggs and salt and beat it well with a whisk.
  • Add these beaten eggs to sauteed veggies and mix them slightly.
  • Cover and cook this for a few minutes.
  • After a few minutes, stir well and add a few chopped coriander leaves into it.
  • Quick and easy egg bhurji is ready to serve.
