Heat 1 tsp of oil in a pan.
Add chopped onion and saute until it turns golden brown.
Add chopped green chilly and saute well.
Add ¼ cup chopped tomato and saute well.
Add finely chopped curry leaves and saute for a few minutes.
In a mixing bowl, add three eggs and salt and beat it well with a whisk.
Add these beaten eggs to sauteed veggies and mix them slightly.
Cover and cook this for a few minutes.
After a few minutes, stir well and add a few chopped coriander leaves into it.
Quick and easy egg bhurji is ready to serve.
