In a pan, heat 1 tbsp ghee and roast the cashew nuts well.
Then add raisins roast until it bubbles and keep aside.
In the same pan, add Rava and roast until a nice aroma comes and keep aside.
Heat 2 tbsp ghee in the same pan and add 1 cup chopped jackfruit pieces.
Saute jackfruit for few minutes.
Add 3 cups water, yellow food color, cardamom and 1 tbsp ghee.
Once the water boiled well, add roasted rava little by little and stir well without lumps.
Once Rava is cooked and thickened, add sugar and mix well.
All sugar crystals melt and the Rava mixture turns watery.
Stir continuously until it thickens well.
Add roasted cashew nut and raisins mix well.
Once Kesari leaves the pan, switch off the flame.
Tasty Jackfruit Kesari is ready to melts in the mouth.
