In a pressure cooker, add jackfruit seed and the requiredamount of water and cook for 5 whistles.
Once cooled well, peel off the outer white skin of jackfruit seed andkeep aside.
In a mixer, add jackfruit seeds grind them into a slightly coarse paste.
Heat ¼ cup of ghee in a pan.
Add chopped coconut pieces and fry until it turns goldenbrown.
Add cashew nut to fry well until it turns golden brown.
Add raisins fry well and take it out from the pan and keep aside.
Add grinded jackfruit seed paste in the same pan and sautefor few minutes.
Add 2 cups of second coconut milk stir well without lumps and cook forfew minutes.
In another pan, add 2 cups of jaggery and ½ cup of water stir well untiljaggery melts.
Filter and pour this jaggery syrup into the jackfruit seed paste mixwell and cook for few minutes. Add crushed cardamom into it.
Add 1 cup of first coconut milk and stir well. After adding the firstcoconut milk don’t cook for a long time.
Finally, add roasted coconut pieces, cashew nuts andraisins mix well.
Delicious Jackfruit seed Payasam is ready to serve.
