Ingredients
  

  • 2 cup Kothavarangai/ Cluster beans
  • Salt (As needed)
  • Water (As needed)
  • ½ cup Coconut
  • ½ tsp Jeera
  • 2 Green chilly
  • ½ tsp Turmeric powder
  • ¼ tsp Asafoetida
  • 1 tsp Oil
  • ¼ tsp Mustard seeds
  • ¼ tsp Urad dhal
  • 1 Red chilly
  • Curry leaves (few)

Instructions

  • In a pan, add chopped cluster beans, salt and water and mix well.
  • Cover and cook until cluster beans are cooked well.
  • Drain the water from cluster beans and keep aside.
  • Heat 1 tsp oil in a pan.
  • Add mustard seeds, urad dhal, red chilly and curry leaves and saute well.
  • Add cooked cluster beans and stir well.
  • Add turmeric powder, asafoetida and salt mix well and saute for a few minutes.
  • In a mixer, add coconut, green chilly and jeera grind coarsely.
  • Add this coarsely grinded coconut into cooked cluster beans and stir well.
  • Cluster beans stir fry/ kothavarangai poriyal is ready to serve.
