Ingredients
  

  • 1 cup Yellow noodles or rice noodles
  • 2 cups Fresh prawns (peeled and deveined)
  • 2 tbsp Oil
  • 4 cloves Garlic (minced)
  • small piece Ginger (grated)
  • 1 Onion (thinly sliced)
  • 2 stalks Lemongrass
  • 2 tbsp Chili paste
  • 4 cups Chicken or seafood broth
  • 1 cup Coconut milk
  • 1 tbsp Fish sauce
  • 1 tbsp Soy sauce
  • 1 tbsp Sugar
  • 1 cup Bean sprouts
  • few Coriander leaves

Instructions

  • Cook the noodles, drain and keep aside.
  • Heat oil in a pan.
  • Add minced garlic, grated ginger and sliced onion to the pan. Saute this for a few minutes until the onion turns transparent.
  • Add prawns and cook for a few minutes until they cooked well. Remove the prawns from the pan and keep them aside.
  • In the same pan, add lemongrass and chili paste and saute well for a few minutes.
  • Add chicken or seafood broth, coconut milk, fish sauce, soy sauce and sugar. Stir continuously until they combined well.
  • Cook this for 10 -15 minutes on low flame. Remove the lemongrass stalks from this recipe.
  • Add cooked prawns and cooked noodles to the pan and mix well.
  • Add bean sprouts and cook for a few minutes.
  • Remove the pan from the heat and finally, garnish the prawn noodles with fresh coriander leaves.
  • Fragrant prawn noodles are ready to serve.
