Cook the noodles, drain and keep aside.
Heat oil in a pan.
Add minced garlic, grated ginger and sliced onion to the pan. Saute this for a few minutes until the onion turns transparent.
Add prawns and cook for a few minutes until they cooked well. Remove the prawns from the pan and keep them aside.
In the same pan, add lemongrass and chili paste and saute well for a few minutes.
Add chicken or seafood broth, coconut milk, fish sauce, soy sauce and sugar. Stir continuously until they combined well.
Cook this for 10 -15 minutes on low flame. Remove the lemongrass stalks from this recipe.
Add cooked prawns and cooked noodles to the pan and mix well.
Add bean sprouts and cook for a few minutes.
Remove the pan from the heat and finally, garnish the prawn noodles with fresh coriander leaves.
Fragrant prawn noodles are ready to serve.
