Take 5 boiled eggs, remove the shell and keep aside.
Heat 1 tsp oil in a pan.
Add 1/4 tsp chilly powder and a pinch of salt and mix well.
Add eggs and fry for a few minutes. Take fried eggs out and keep them aside.
Add 2 tbsp of oil to the same pan and heat it well. Add mustard seeds,1/2 tsp jeera and curry leaves and saute well.
Add chopped onion and saute until it turns golden brown.
Add ginger garlic paste and saute well.
In a mixie, add chopped tomato and grind it into a smooth paste.
Add this tomato paste to sauteed onion mix well and saute it for a few minutes.
Once sauteed well, add turmeric powder, chilly powder, coriander powder, and garam masala mix well and cook for a few minutes.
Add enough water and salt and mix well.
Cover and cook for a few minutes.
Once cooked well, add fried eggs and cover and cook for a few minutes.
Finally, add chopped coriander leaves and mix well
Simple Egg curry is ready to serve.
