Soya egg fry roast is a nonvegetarian snack and a side dish recipe prepared using soya chunks/meal maker. It tastes like mutton. This soya fry can be eaten as a snack or as a side dish for curd rice or any variety rice, chapati, paratha, poori, etc.

Ingredients
  

For cooking soya

  • 1 cup Soya / Meal maker
  • Salt (as needed)
  • Water (as needed)

For frying soya

  • 2 Egg
  • 2 tsp Chilly powder
  • ½ tsp Pepper powder
  • ¼ tsp Turmeric powder
  • 3 tbsp Corn flour
  • Salt (as needed)
  • Oil (as needed)

For masala

  • ¼ tsp Mustard seeds
  • Curry leaves (few)
  • 1 tsp Jeera
  • 2 Onion (chopped)
  • 2 Tomato (chopped)
  • 1 tsp Ginger garlic paste
  • 2 tsp Chilly powder
  • 3 tsp Coriander powder
  • Salt (as needed)

Instructions

  • In a pan, add water, salt and soya chunks and cook for a few minutes.
  • Once cooked well, take it out without water and keep it aside. Press and Squeeze all water in it.
  • In a mixing bowl, add cooked soya, eggs, salt, chilly powder, pepper powder, turmeric powder and corn flour mix well.
  • Heat oil in a pan.
  • Add soya chunks and fry well on high flame.
  • Once fried well, take it out from the oil and keep it aside.
  • In the same pan, add mustard seeds, curry leaves and jeera saute well. Add chopped onion and saute well until it turns golden brown.
  • Add ginger garlic paste and saute well.
  • Add tomato and saute for a few minutes.
  • Once sauteed well, add chilly powder, coriander powder and salt mix well.
  • Add fried soya and mix well.
  • Cover and cook for a few minutes.
  • Add chopped coriander leaves and stir well.
  • Soya Egg fry is ready to serve.
