Peel off cucumber skin and cut into small cubes
In a mixie, add coconut and green chilly grind it into a smooth thick paste
Take a pan, add cucumber and water
Cover and cook for few minutes until cucumber becomes soft
Add grinded paste and salt cook well until it comes to thick gravy consistency and keep it aside
Heat oil in a pan, add mustard seeds, red chilly and curry leaves
Add this seasoning into the cucumber pachadi
Cucumber pachadi is ready to serve with rice
