Ingredients
  

For cooking cucumber

  • 1 medium size Cucumber
  • ¼ cup water
  • Salt (As needed)

For coconut paste

  • 1 cup Coconut
  • 1 Green chilly
  • ¼ cup Water

For Tempering

  • 2 tsp Oil
  • ¼ tsp Mustard seeds
  • 1 Red chilli
  • Curry leaves (Few)

Instructions

  • Peel off cucumber skin and cut into small cubes
  • In a mixie, add coconut and green chilly grind it into a smooth thick paste
  • Take a pan, add cucumber and water
  • Cover and cook for few minutes until cucumber becomes soft
  • Add grinded paste and salt cook well until it comes to thick gravy consistency and keep it aside
  • Heat oil in a pan, add mustard seeds, red chilly and curry leaves
  • Add this seasoning into the cucumber pachadi
  • Cucumber pachadi is ready to serve with rice
