Ingredients
  

  • 1 cup White pumpkin (chopped)
  • 1 Green chilly (chopped)
  • 1 Onion (chopped)
  • 2 tsp Oil
  • ¼ tsp Mustard seeds
  • ¼ tsp Jeera
  • Curry leaves (few)
  • Salt (as needed)
  • 1 tsp Chilli powder
  • ½ tsp Turmeric powder
  • ¼ tsp Garam masala
  • ¼ tsp Asafoetida

Instructions

  • Heat oil in a pan.
  • Add mustard seeds, jeera and curry leaves saute well.
  • Add green chilly and onion saute until golden brown.
  • Add chopped Ash gourd and saute for few minutes.
  • Add chilly powder, turmeric powder, garam masala, asafoetida and salt stir well.
  • Cover and cook until the ash gourd cooks well.
  • Ashgourd Fry / venpoosani masala is ready to serve.
