White pumpkin curry / Kumbalanga curry is a vegetarian curry recipe prepared using white pumpkin. White pumpkin is also known as kumbalanga, ash gourd, vellai poosanikai. Kumbalanga curry is the best side dish for rice.

Ingredients
  

  • 2 cup White Pumpkin (chopped)
  • 10 Small onion (chopped)
  • 3 Green chilly (chopped)
  • Salt (as needed)
  • ½ tsp Turmeric powder
  • Water (as needed)

For grind

  • 1 cup Coconut
  • Water (as needed)

For tempering

  • 1 tsp Oil
  • ¼ tsp Mustard seeds
  • Curry leaves (few)
  • 1 Red chilly
  • 1 Small onion (chopped)

Instructions

  • In a pan, add chopped white Pumpkin, small onion, green chilly, turmeric powder, salt and water mix well.
  • Cover and cook this for a few minutes or until the white pumpkin is cooked well.
  • In a mixer, add 1 cup of coconut and grind it into a smooth paste by adding enough water.
  • Add grinded paste to cooked pumpkin and mix well.
  • Add required water and salt and mix well.
  • Slightly heat the curry and switch off the flame. Don't allow it to boil well.
  • Heat oil in a pan.
  • Add mustard seeds, red chilly and small onion saute until small onion turns golden brown.
  • Add curry leaves and saute well.
  • Add this tempering to the White Pumpkin curry.
  • White Pumpkin curry or Kumbalanga curry is ready to serve with rice.
