White pumpkin raita/ ash gourd raita is an easy vegetable stir fry recipe prepared using ash gourd. Ash gourd is also called white pumpkin, vellai poosani, kumbalanga, saphed kaddoo, wax gourd, and winter melon. This vellai poosanikai raita is the healthy side dish for rice.

Ingredients
  

  • 1 cup White pumpkin (chopped)
  • Salt (as needed)
  • Water (as needed)
  • 1 cup Curd
  • 2 Green chilly (chopped)
  • Coriander leaves (few chopped)

For tempering

  • 1 tsp Oil
  • ΒΌ tsp Mustard seeds
  • Curry leaves (few)

Instructions

  • In a pan, add chopped white pumpkin, salt and water and cook until it cooks well.
  • Allow it to cool completely.
  • Once cooled well, add chopped green chilly, coriander leaves, salt and curd mix well.
  • Heat oil in a pan.
  • Add mustard seeds and curry leaves and saute well.
  • Add this tempering into white pumpkin raita.
  • White pumpkin / kumbalanga raita is ready to serve.
