White pumpkin stir fry/ ash gourd stir fry is an easy vegetable stir fry recipe prepared using ash gourd. Ash gourd is also called white pumpkin, vellai poosani, kumbalanga, saphed kaddoo, wax gourd, winter melon. This Ash gourd stir fry is the best side dish for rice.

Ingredients
  

  • 2 cup White pumpkin (chopped)
  • 1 tsp Oil
  • ¼ tsp Mustard seeds
  • ¼ tsp Jeera
  • ¼ tsp Urad dhal
  • Curry leaves (few)
  • 1 Onion (chopped)
  • 1 Tomato (small chopped)
  • ¼ tsp Turmeric powder
  • Salt (as needed)

To grind

  • ½ cup Coconut
  • ½ tsp Jeera
  • 2 Red chilly

Instructions

  • Heat oil in a pan.
  • Add mustard seeds, urad dhal, jeera and curry leaves and saute well.
  • Add chopped onion and saute well until it turns golden brown.
  • Add tomato and saute well until it cooks well.
  • Add turmeric powder and salt and saute for a few minutes.
  • Add chopped white pumpkin or ash gourd and saute for a few minutes.
  • Add required water and cover and cook for a few minutes. Once the ash gourd is cooked well, dry well without water.
  • In a mixer, add coconut, jeera and red chilly grind it coarsely.
  • Add grinded paste and salt into cooked ash gourd and stir well.
  • White pumpkin/ash gourd stir fry is ready to serve.
