Yellow Pumpkin fry recipe | Kaddu ki sabzi is an easy vegetable stir fry recipe prepared using Yellow Pumpkin. Yellow pumpkin is also known as arasanikai, parangikai, manjal poosanikai in Tamil, Mathanga in Malayalam and Kaddu in hindi.

1 cup Yellow Pumpkin (chopped) 1 Onion (chopped) 1 Green chilly (chopped) 1 tsp Chilli powder ½ tsp Turmeric powder ¼ tsp Garam masala ¼ tsp Asafoetida Oil (As needed) ¼ tsp Mustard seeds ¼ tsp Jeera Curry leaves (few) Salt (As needed)
Heat oil in a pan.
Add mustard seeds, jeera and curry leaves saute well.
Add green chilly and onion saute until golden brown.
Add chopped yellow pumpkin and saute for few minutes.
Add chilly powder, turmeric powder, garam masala, asafoetida and salt stir well.
Cover and cook until the pumpkin cooks well.
Pumpkin Fry is ready to serve.
