Yellow Pumpkin Raita / poosanikai pachadi recipe is an easyvegetable raita recipe prepared using Yellow Pumpkin. Yellow pumpkin is also known as arasanikai, parangikai, manjal poosanikai in Tamil, Mathanga in Malayalam and Kaddu in hindi. It is the best sidedish for rice.

Ingredients
  

  • 1 cup Yellow Pumpkin (chopped)
  • 1 Green chilly
  • ¼ tsp Jeera
  • ¼ cup Coconut
  • ¼ cup Curd
  • 1 tsp Oil
  • ¼ tsp Mustard seeds
  • Curry leaves (few)
  • 1 Red chilly
  • ¼ tsp Turmeric powder
  • Salt (as needed)

Instructions

  • Take a pan, add chopped pumpkin and water cook well.
  • Once the pumpkin is cooked well, smash it with a spoon.
  • In a mixer, add coconut, green chilly, jeera and turmeric powder grind it smoothly.
  • Add grinded paste and salt into the cooked pumpkin mix well and cook for a few minutes.
  • Once the raw smell of coconut paste goes, add curd and mix well.
  • Don’t allow it to boil. Just heat it after adding curd and keep it aside.
  • In another pan, add oil, mustard seeds, curry leaves and red chilly saute well.
  • Add this tempering into the pumpkin pachadi and mix well.
  • Yellow pumpkin pachadi / Yellow pumpkin raita is ready to serve with rice.
